Stuffed Mushroom Recipe

It seems that I’ve developed something of an affinity for cooking lately. Every weekend, I’ve been making up batches of healthy food and bringing the recipes to you! (Well, those apple dumplings weren’t so healthy, but…you know…).

Anyway, today, I’m showing you a recipe for simple stuffed mushrooms. They’re easier to make than the ones you’d purchase in a restaurant, and also much cheaper. One pack of mushrooms is all you’d need to serve up to twelve or fifteen people, and they cost about two dollars.

These yummy mushrooms only take about thirty minutes to make, so here we go!

Things You’ll Need:

One pack of mushrooms (whole, uncut)

Baking/cooking spray

Shredded cheese (I chose a Monterey jack and cheddar combo)

 

What to do:

  1. Pre-heat your oven to 350 degrees.
  2. Soak mushrooms in water for about ten minutes. You can add a cup of vinegar to the sink if you really want to remove pesticides!
  3. Rinse your mushrooms off in a strainer with cold water and lay them out on a cutting board.
  4. Grab a small knife and a spoon and cut the stems off of the mushrooms. You can throw these into pasta sauce or compost them.
  5. Use the spoon to “core” the mushrooms – removing any stem left inside and any meat inside the mushroom. Be careful, though, or the cap will bust open!
  6. Lay the emptied caps on a baking pan that’s been sprayed with cooking spray.
  7. Grab your shredded cheese and stuff the mushrooms full of it. Pile up the cheese on top, because it will melt down quite a bit in the oven.
  8. Bake your mushrooms for about 30 minutes. You should check them occasionally, though, because you want them to be soft, but not falling apart. If the cheese has melted down too much, just throw a pinch extra on top of the cap.
  9. Let cool and serve.

If you want to be extra fancy, you can add in other ingredients to your mushrooms. Sausage bits in the cheese are magnificent, but take some extra time to cook. Adding chopped bell peppers is also yummy and easy to do. They bake down in the cheese, so you don’t have to prepare them earlier.
