I’m not a vegetarian, but I’m not a big meat eater, either. I’m also most definitely not a cook. But recently, I’ve been trying lots of experiments in cooking, and I like it a lot! I recently found a zucchini recipe that turned out really well, so I thought I’d share it for all of you veggie fans. If you’re not a veggie fan, you should try this and see if it changes your mind.
Start off with a couple of ripe zucchini. They should be about the size of your extended hand. Slice them into thin strips – about six apiece. If you want the end product to be a bit crunchier, then slice them into more strips, but for softer squash, use bigger ones. Preheat oven to four hundred degrees.
Lay the strips out in a baking sheet and brush them with olive oil. You can also sprinkle a little pepper over them. Bake for ten minutes, or until the squash is soft. Use a fork to determine if they’re still pretty raw or not. They don’t have to be perfectly done yet because you’ll be baking them some more in just a minute.
Take the squash out and add in a diced tomato. You may not actually use the entire tomato; I used about half of mine. Add in mozzarella cheese. You can use shredded cheese or slices, but slices work best because they coat the zucchini better. Shredded cheese starts to melt and slide off, but slices won’t do that. You can also add oregano or a little garlic, but I don’t suggest salt. The tomatoes already have a bite to them, so it’s unnecessary, and salt is really bad for you.
Place back in the oven for about five minutes, or until the cheese is completely melted. The tomatoes will also be roasted by this time. Let cool and transfer to a serving plate. You can also add more cheese if you need to, because it’ll still so the cheese will still melt.
This is a really simple recipe that makes for a great side dish. It’s a far better alternative than frying zucchini, and it’s tastier than just baking it by itself. If you’ve never been a fan of squash, try this cheesy alternative and see if you don’t change your mind just a little bit! It’s a great idea for novices like me.
